As for factors, you can select either stone or steel burrs or impact mills, motor driven or hand cranked, big or little, high or low throughput, noisier or quieter, narrow or wide range of output types, etc.

In my own case, I wanted convenience, simplicity, the ability to produce anything from cracked grains to meals to fine flours, reliability, and (comparatively) low noise.  Since I only grind enough for 1 to 4 loaves of bread at a time, high throughput wasn’t a big deal.  I purchased a Komo Fidibus Classic mill which ticks all of those boxes.
