Help. Dough left too long

Toast

My friend very kindly gave me some starter dough but I think I might have ruined it. I wanted to make the bread so following her instructions I added 200g of flour and water late last night. Unfortunately I over slept so the mixture will have been on the worktop, covered with a tea towel, for about 12 hours. It failed the float test. What can I do?

First of all, depending on the hydration a levain or starter may fail the float test even when it is ready to use, so don’t panic.

Does it look like it has risen and is now falling?  If it is still rising it will be domed on top.  If it is falling there will be some streaks on the side of the glass and the top will be flat or sunken in.

If still domed, then it was still rising and you needed to give it more time.  If it had the falling look, no worries, you could remove a portion and feed it again.  How much depends on how much you need to make your dough and how soon you may want to do it.
