Hey all,
My husband has an allergy to wheat. Thankful to have a mill & mix I can grind Kamut, Spelt and more. Recently I tried out some rice bread recipe's I used to make (daughter with Autism and allergies) and I forgot how good it can taste. I'd like to grind my own rice, tapioca & quinoa but wonder if anyone else does this? Any tips or advice?

It depends on the mill/stone/manufacturer. I would check your mill's manual or website, there you can find what you can grind and what not. I think rice and quinoa should be okay, but I'm not sure about tapioca.

My electric stone mill is a Howas Billy 100, a small family size mill. The instructions for this mill is to mill brown rice at setting 1, which is fairly fine, the same setting for the whole wheat. I use this mixed with bread flour to coat my bannetons and wooden peels.
Quinoa is 0.5, no mention of tapioca.
