My usual fish batter for frying calls for 1 c. rice flour, 1/2 T. baking powder, 1/2 T. kosher salt, 1 c. soda water and a beaten egg.
I've started adding about 50 grams of discard with the liquids.
The difference in the flavor and texture of the fried batter is notable - an improvement on an already good thing!
I've been making a sourdough pancake every morning. Just fry up the discard and either add savory spices or syrup.
