
These loaves are the outcome of a lot of trial and failure. However I’m pretty happy with these loves. The flour is from The Mill at Jamie’s Farm in Ashkum, IL - Calumet organic Glenn whole kernel bread flour. The loaves have good volume, robust flavor, mild acidity, thin crust,
flour 100%
water 70%
salt 2.5%
100% hydration, whole wheat, leavain 20%
I am going to increase the hydration to 80 - 90% looking for a more open crumb.

I’m glad to know others are on to Janie’s. They are a new source for me. I am Indy based and prefer to mill my own flour as well. My plan is to experiment extensively in the coming months. Please keep us posted on which flours are working for you. I will pass on my experiences as well.

Re: Indy based. I've been buying whole berries from CLNF.org in Mich. not Indiana-grown, but good prices. So far have gotten Prairie Gold and Kamut.
There is an informal buyer's club/group here in Indy. We get free shipping on their company truck for orders over $400. But it has to all go through one person. The coordinator of the group that I am in, is in NW Marion County. Order with that person, Pay that person, and go over to their house to pick up when it comes in.
The order does have to be placed on schedule with their truck route. They don't make special trips.
Contact CLNF.org via email and ask to be put in contact with the "group order coordinator" for Indianapolis. And ask which route we in Indianapolis are on (I forget), so you can see the schedule.
last I looked they had rye, Bronze Chief, oat groats, and tons of natural foods.
