Experimental Maltese bread formula

Today's experimental formula:
Convert a commercial yeast Maltese bread formula into a sourdough formula. My friend Karina, from the Maltese cooking club mentioned she wanted to figure out how to use her new starter in her commercial yeast formula. Challenge excepted and met!
I can't wait to slice into this one! This is a traditional "lean" bread, just Flour water salt and wild yeast.

Really nice crumb and oven spring.  I find that the few times I've converted from IDY to levain was actually pretty easy.  Basically just figure out the percent of pre-fermented flour you want, and adjust the formula and timings to that.

Is Joe's on Carmine doing window service?  Else how will you survive?

We are okay, however the virus hit my family hard. I lost my brother to it. Trying to stay busy and come to terms with this loss. I had not spoken to Mario in a couple of years. I always thought he would come around and we would be together again. I hope you and yours are doing well. 

 

So sorry and sad.  Was Mario living in Malta?  I've known a very few people who have been hit, but they've been lucky to have the mild cases.  My Brother in law across from you hightailed it to his suburban NJ home a few weeks ago.  

But we still have family throughout Manhattan, including my pretty darned old in-laws who live in a senior independent living building in Battery Park.  Already a handful of them had been hit and passed away.  The entire building is under lockdown and residents are forbidden to even leave their apartments.  All aides must be live in at this point, equally forbidden to leave the apartment during their 3-4 day shifts.  The management company is doing whatever they can, but all it takes is one worker coming in from the streets and subways to infect a few people.

Of course the Joe's survival thing was meant as humor, and you are the Pie King!
