Into + Seeds & Fruit Question

Hi!

Just joined the forum and after lots of lurking, looking forward to being signed up and joining the community a bit. 

I’ve just done a few simple white loaf/boule in a Dutch oven kinds of breads and want to branch out into adding some seeds, nuts, and dried fruits. What’s a good starting point for the amount to add? I saw a small reference to 20%, does that seem reasonable?

20% is pretty standard, but I think you can push it to 30% if you'd prefer. Often for 1000g flour I'll do 150g nuts and 150g fruit. 

I know Hamelman's five grain uses about 1/3 the flour weight as seeds and grains.
