As cooler weather sets in here in the northeast US, I get back to baking breads. I like to explore some of the less common corners now and then. Right now, skillet breads have my attention. The inspiration was an old cast iron frying pan that's been around for many years coupled with a simple corn bread recipe. That's led to some interesting results.

I've used cast iron skillets my whole life and acquired enough for my kids to have them,also. They do make some of the most delicious pies and breads. Corn bread, soda bread and any kind of pie crust develop a wonderful, crispy crust. Biscuits,too, but they turn out especially well if the pan is pre-heated and has melted butter in it when you put the biscuits in it.

Share some recipes or even some guidelines (if recipes aren't your thing).
