Bernard Clayton's molasses whole wheat

I decided to make it this morning.  One thing I love about bernard's breads is that they're complete in a few hours start to finish.  I can fit his into my schedule when I know I need to bang out something good quickly.

Btw .. I convert many of these to vegan.  Used cashew milk in this one for example.

I've had his book for years, but haven't baked from it in awhile and will try this one.  One favorite is his Portugese Sweet bread for the texture, and balance of citrus & vanilla.  A double batch uses up the can of sw cond milk.

His Breads From France book is fun, organized by regions with anecdotes about each, the local bakers and breads.

I appreciate the feedback and info! I didn't know about his other book.  Heading to amazon right now to get it!  Much appreciated!

My breads of France book got here and I've been reading it.  It's a fun read.  Love the stories.  I can't wait to try some of these.  Thanks much!

I'm a collector of new & old, and read them like novels while deciding what to try.  Interested in food history.  Glad you like the France book!

I've made several breads from it, but one of our favorites is Le Bun de Montmelimar.  A less buttery brioche-type bun that's good with raisin-lemon, cranberry-orange, dried cherries, etc.  A nice breakfast bun that stays fresh for a few days.  If you slightly flatten the unrisen dough balls like a hamburger bun, they split and toast nicely.

Thanks much.  I ordered the book today.  Can't wait to go through it. I'll look at the le bun.
