Greetings, I'm new to the forum and just wanted to introduce myself. I'm currently developing my own barm and am very interested in the fermentation process. I've mostly been working out of Peter Reinhart's Bread Baker's Apprentice book; currently experimenting with his delayed-fermentation method. I look forward to lurking around the forum!
