Just wanted to say a hearty thank-you for all of the inspiration and amazing body of knowledge that is on this site! I have been an amateur weekend hobby baker for many many years, but now that my youngest has left for college (go 'Nados!) I find myself with a lot more time on my hands and a growing interest in bread. I just finished a multi-grain loaf with the best results I have ever had, and my first ever sourdough starter should be ready to roll tomorrow morning (so excited!) Thanks again, you all are great.

Yo will enjoy the whole sourdough process and the results are excellent. A yeast bread wlll go stale after 2 days on the counter. A 'sourdough' loaf will stay moist for 4 or 5 days. Enjoy the adventure!
