Pretty new baker, wanting to learn all I can. I used to bake a lot when I was younger, then recently started binge watching Great British Bake off on Netflix and found my passion again. Really wanting to get into breads, so far I can make a nice french bread, and some really good soda breads. Want master ciabatta and some rye breads next to try and expand my portfolio to try and sell during next years farmer's market season.

Keep an eye out for the upcoming community bake, not ciabatta but maybe a bread you'd like to try, too.
Thank you! Where do I find that at? I'm always happy to try just about any bake. Gotta find something to learn while I save up for a good mixer to be able to make a ciabatta anyway.

Are they all sourdoughs usually? Haven't built up the courage to make a starter yet, mostly because I don't have a schedule that lets me make sure I'm feeding it every 12 hours.
Yes, there are sourdough. I thought that is what you are baking.
But, you could use commercial yeast with a poolish. I am in the process of getting the amounts and nstructions for /aking a 123 without a Starter. I think I'll post that on the community bake for others that don't use starters.

What part of Texas are you from I live in East Texas and would be glad to share some starter with you if you are close enough to meet up. Save you the time starting from scratch and just need to maintain it.
