I own Clayton's Breads and Ultimate Bread. Also a flea market purchase for about a buck apiece (which in itself says something about the value of the books).
Used Clayton for two breads -- both outstanding
Have not used Ultimate -- but I like the descriptions and photos.
Clayton's was my first "proper" bread book, and aside from the extremely annoying volumetric measurements, I had great success with it. I confess, I usually omitted the dried milk powder. His batter corn bread remains my favourite cornbread.
