I've recently returned back to Perth (Western Australia) after living in Copenhagen for the last 4 years. While in Denmark I learnt how to make some amazing sourdough using a blend of different flours, T45, T65, T80 and wholemeal. I've found an organic grain supplier but I'm having trouble finding a mill who can or will produce these types of flour. I know it's a long shot but if anybody knows of anywhere in Western Australia, a method I could use (which doesn't cost a small fortune), any information or advice would be gratefully received.

Hi Mark welcome back to Perth unfortunately there are not so many choices when it comes to mills here in the West
There is Eden Valley from down Dumbleyung way in the Great Southern who produce Bio dynamic flours
Thanks Derek, I'm really after somewhere where I can work with the miller to mess around with different grades of white flour. Eden Valley are too busy and Miller's aren't interested unless maybe I buy a couple of truck loads, However I'll give Dingo a try and keep looking.

There are a couple of TFL people over here in Perth Ross (rossenroller) we have had a couple of meet ups
i belong to a local facebook group Freo foods bread and i know one of those ladies mills her own flour
