Had some fun making small pizzas (less than 10 inches). 65% hydration dough with tomato sauce, home grown basil, fresh mozzarella (+ anchovies for first one below), and a drizzle of EVOO.

We love pizza and I had bought some fresh mozz to put on one but ended up making a wonderful eggplant parmesan instead :)  Your pizza I can smell all the way over here !!   c

I got a short notice to prepare it, so I mixed starter and 0.5g yeast on 400g flour. Bulk fermentation lasted about 5 hours. Ingredients were also requested to be only cheese, tomato sauce and basil. Simple simple.
