Over-proofed sourdough bread made lotsa breadcrumbs. I have been using them with abandon. Today's broccoli-brown rice-egg-cheddar-parmesan casserole was immensely improved by a layer of sourgough breadcrumbs on top. I baked the casserole long enough that the crumbs became extra crunchy.
