Homemade Sourdough Pita

I've been craving pitas lately so I made a batch of sourdough oat bran pitas for lunches this week with some hummus. I made the dough last night and baked them off this morning.

Here you go, all didn’t puff but still had a few that did, still all delicious.

Dear Shark, these look great!  Can you please share your recipe/source?  I've never tried a SD version.  I've been thinking about pita lately and want to try a different recipe.  It had been awhile between batches (and who knows what I did different, - the yeast was fine), but the last time I used my usual recipe none poofed.  Usually they all poof beautifully.  Just wasn't my day to bake.  After seeing the first few fail I rolled and baked the rest into wraps.

Here is the recipe I used to make the pitas. I did modify it to add in the oat bran. I also used olive oil, not the coconut called for in the recipe. As i stated not all puffed but the way I use them that really is no big deal for me.
