I summoned all my energy for a bake off...one white loaf, one raisin bread loaf and half a dozen hot cross buns...will cross later. The raisin bread dough I split in 2 half for the buns ...kneaded in some mixed spice and some mixed fruit and got 6 hot cross  buns...super happy....

The buns are experimental so will report on the crumb later..lol decided to ice them all over because I’m a rebel...lol and I like icing...:-)))) 

I really think the size tin you use can help...I just happen to find the perfect tin for 450g of flour, gives great height. The tin I found is Wham 2lb loaf tin on Amazon and ebay. 

I usually made mine with about the same amount of flour.
