Brioche; second rise overnight in fridge?

Toast

hi,

Im wanting to make brioche doughnuts in the morning. And wondering if it’s possible to do the second prove (rise) overnight in the fridge? Will it overprove, or cause any issues?

otherwise is there anyway to quicken up the second rise?

Thanks

I always give brioche dough a second long rise in the fridge ON.  The flavor and texture then is hugely improved.  No comparison.  It wont over proof.  You will have to take it out to warm up though.  Good luck.  You will like the flavor from ON in the fridge.
