Hello all. My name’s Roy and I am new to this site.
I have an opportunity to open a stall in a food market this summer and am trying to perfect my food. I will be selling ‘pockets’, like a sandwich. I would like your help to make the perfect pocket bread. I’m thinking a cross between a brioche and an empanada. As I’m only a basic baker I suppose my biggest question is, is it possible to create something that’s halfway between a pastry and a bread? Thanks for reading, look forward to my replies!
Nice to have you on board.
How about a cronut?
Was hoping to keep it healthy. No way of making a cronut without frying? Or something similar? Thanks Lechem.
can both be baked and not fried then you can create a healthier version. Good ingredients, a tweak here and their etc. I'm sure it can be brainstormed.
how about a variation of a bialy?
Thanks. Will give it a try and get back!
How about something like this?
It is a Chinese baked bun, like a crescent roll, but with far less fat or no-fat between the layers.
OK, tried a cronut from Dominiques, not what i'm looking for but bloody delicious!! Thanks!! I did come across a bread thats very similar to what i want. It's in the German doner kebab in London. Almost like a crispy waffle bread. Anyone got a recipe for that? Thanks.
