I agree, this is a fairly thick study on the subject matter. Raymond Calvel's "The Taste of Bread" is still the most dogeared on my shelf and will probably remain so.
I like Bernard Clayton's Complete Book of Bread. It is the only bread book I own since I haven't bought Trevor's ebook yet .......hoping I get it for Christmas. With a title like Clayton's who needs another one? Modern is still out there for me to bake one day though....maybe when I grow up. Sadly, real men never get much older than 8 so I may not live long enough - never enough time-)
