3 phase. Looked at Doyen, TMB, and Bongard. I have worked with a Bakemax in the past and not impressed at all. Never heard of a Miwe? Where are the made and how much?
Miwe ovens are made in Germany and are shipped world wide, the Condo lineup come in various sizes, and deck heights and they can be stacked five high. There are plenty of these ovens in use, so it's often possible to find slightly used gear for 30 or 40% less than new. What are the new prices, you would have to check with Miwe in what ever country your operating out of. Last year, I got a quote on two 60cm*80cm decks, with stand for 14000 Swiss Franc. That's out of my league, I ended up buying german made Wiesheu ovens, 5 years old, same size for 2000€.
For what purpose - rolls, bread, sweet, pizza?
rolls, bread, buns. A little bit of everything.
Do you have 3 phase electric? If not your choices will be narrowed down considerably.
"Who makes the best one?" How deep are your pockets?
The Miwe condo deck ofens are top rung, they carry a hefty pricetag though.

cheers and happy shopping
Hello,
How does the Wiesheu oven perform in comparison to a top rung oven like miwe?
I am considering buying the two as they seem to be the most common on the second hand market.
Thanks
