Stupid question; but when people talk about a "500 gram loaf" or a banneton is listed as being for an "800 gram" loaf, is that referring to pre-baked dough weight, flour only weight, or post-baked weight loaf??
Usually everyone here is talking about the dough. Adding up the weight of all the ingredients. For a banneton it would always be talking about the dough because only dough goes into a banneton.
However if a baker sells you a 500g loaf they're talking about the final product so they have to take into account loss through baking.
This is the origin of a bakers dozen = 13. Baked goods lose weight so they throw in an extra item to make up for that loss.
