Is that if you next batch doesn't meet up with the last amazing one you are a bit bummed. Was hoping for better today but That's all part of it - there's tomorrow to try again :\
I love giving folks and family bread so too bad we can't upload a loaf to tfl or attach one to a pm, otherwise youd be the first recipient ! I'm being persnickety and an little upset at myself as I spaced,out on a few steps not only yesterday for this bake but also for today / tomorrow. What was so annoying about today is that I ruined 2 of my 3 loaves and came out with one fairly nice one (pictured) but the other two were disasters on the outside and that's just a bummer :(
Last week I cut open loaves on Saturday and revealed pretty much my idea of the perfect crumb - not too open not too closed, wall starting warp. Got a feeling today is likely gonna be just alright ...
Better to set our sights on "just okay" and then the disappointment never sets in, and anything better than just okay yields contentment. Nah, toss that idea in the refuse bin.
But setting high standards and then meeting them does create a problem, as you are experiencing. I've also had troughs where I scratch my head and swear that I'm doing nothing differently - but the proof is sitting there in front of me. Fortunately, I have a dog who is quite willing to be a partner in crime and help me get rid of the evidence. They are typically short-lived episodes and rarely come to visit. So this is what you'll experience as well.
And they still look better than 95% of what is out there.
