Kamut Toasted Almond Millet Bread

This is a relatively simple bread made with fresh milled Kamut flour, KAF Millet flour and KAF Toasted Almond Flour.  I added some smoked pecan maple syrup for extra sweetness which complimented the nutty flavor of the almond flour.

All in all, this one came out very tasty and made some great grilled bread with olive oil for dinner this week.

The crumb could have been a bit more open but it was nice and moist.

Your bread isn't simple. Sourdough fermentation is always complex. ;)

I always fail at scoring. Whenever I score my bread, it would just create a crevice in it that doesn't really do anything!

That's such a beautiful loaf. I wouldn't be able to resist the urge of slicing it in half and doing it damage if I ever get my hands on one!

Thanks.  There are some excellent tutorials on this site on Scoring that you should check out.  Once you understand the basics it's pretty easy and allows you robbed creative.

I don't have a razor blade and I couldn't find it in any hardware stores nearby.

I've tried everything with my scissors to no avail.

I just gave up on scoring because I never got any great results. Shallow scoring and it would just retain a small open wound. Too deep and it would create a crevice. They never really opened up beautifully.

You can find a lame on Amazon or go to the hardware or drug store and pick up some straight edge blades.  You can attach one to a coffee stirrer or stick and you are set.  Scissors are good for some accent cuts but not really for scoring.

With "Shipping rates for as low as USD12.99" no. No, thank you. I've found some that costs $10 on eBay, but I can only imagine how high it would go with shipping fees.

As for straight edge blades, I've tried looking for them in drugstores with no avail.

I'll try to look for a sewing store someday to find some linen cloth and blades.

bet the taste has ti be great with the almond meal, Kamut and french flour.  Kamut always seems to be part of Lucy's whole grain sprouted mix.  That crumb looks very open with so  much whole grain and nut flour getting it the way.  All around this is one fine bread inside and out.   Lucy sends here best to the black ones and their 5 furry friends.

It's almost hard to imagine the flavour of all those good things together. I've never baked with almond flour. I try to stay away from almonds because of the environmental impact, but they do have a nice flavour. I wonder if a similar substitute could be found. And smoked pecan maple syrup! Wherever did you find such a treasure? It sounds delicious. :)

Thanks for your kind words.  You can certainly try ground pecan meal or hazelnuts instead and I'm sure it would taste great.  Never heard of almonds having a negative impact on the environment compared to other nuts.  Will have to investigate further.

The smoked pecan maple syrup was found by my wife from a new on-line company who sells all kinds of interesting maple syrups.
