Thanks for posting; this is a good article for sure. It's so nice to know one can make bread just about anywhere, even after the apocalypse! And I really like the idea of adding sour milk (though I would use home made kefir) and beer to the mix. I bet it tastes amazing, that very-slow bread.

I too like Bread Magazine, though I don't have time to keep up with it. One of my first sourdoughs was the basic recipe that's on there, with excellent pictures and instructions.
