raw dough(bread or cookie) can lead to serious health problems in some people. however, i have a friend who will only eat raw cookie dough. when i make cookies, i save a portion for her. she's never had a problem.
I taste the levain to insure that it will impart the right degree of "sourness" to the bread also that it has the right "sweet & sour" balance prior the main dough build.
Large food conglomerates have risk committees whose purpose is to forestall litigation or at the very least place statements warning consumers that their product may contain hazardous substances if consumed unbaked. The down side to this sort of warning is, "just exactly what is meant by unbaked?"...,
I've heard of people who like to do so but it's not recommended. There is a possibility it can make you ill.
And i am one that isn't fond of raw cookie dough either. Now cake batter is another story! ;-)
