Added a full diced jalapeno to this mix along with about 1/4 cup of canned corn kernels. Sorry no fresh corn to roast her at this time of year. I will double both the corn and pepper next bake. The additions make a delicious bread!

Skillet corn bread. Heat the skillet in the oven to 400F
1/2C corn meal
1/2C flour
1/2 tsp baking powder
1/4 tsp baking soda
1/2 tsp salt
2 Tbs sugar
Mix dry ingredients.
1 egg beaten
1/2 C milk
2T honey
Mix wet ingredients and add to dry
2Tbs butter, melted in the cast skillet to butter coat the skillet well, then added to the mix. Once the oven temp is up to 400F add the batter into the hot skillet baking for 16 minutes total, turning at the 8 minute mark.
To this base recipe I added 1 jalapeno chopped fine and about 1/3 cup of canned corn. I will use both more pepper and corn next bake.

Hatch and poblanio peppers is our go to recipe so this one is very close to that. This is better than take 1 for sure. it even looks better!

Yes it is a better result. I added a small amount of baking soda this time and think it gave me a little better rise than just using baking powder. No skiing until Tuesday and the Family day weekend crowds are large.

I love jalapenos! A little bit of cheese may not hurt either.
A little cheese is also a good idea. One of the recipes I googled did include some cheese, so I will try next time.

this will go great with my chicken veggie noodle soup tomorrow. i have roasted NM chilies in the freezer that will be perfect in this corn bread.
