Mehrkornbrot mit Samen

Yesterday's bake.

Whole spelt, whole rye and rye meal with a bit of all purpose.  60g of seeds equally comprised of sunflower, pumpkin, sesame and flax seeds.  Around 75g of simmered wheat and spelt berries.  

 

Formula according to Tom Cat's semolina Filone.  Baked at 45 deg F for 50 min, then 370 deg F for 35-40 min.  24 hour rest before slicing.
