Pretzel Rolls Stuffed with White Vermont Cheddar Cheese

closeup1I made these to bring to my Brother-in-laws for Thanks Giving while visiting North Carolina as usual.  I adapted my formula for Potato SD Pretzel rolls and adjusted the water to compensate for the removal of the potatoes.

I used KAF bread flour mixed with KAF medium rye flour.  I also added some maple syrup.

I stuffed each roll with a couple of pieces of extra sharp white cheddar we bought during our last trip to Vermont and sprinkled some on top along with pretzel salt.

The final result was as good as it looks.  The taste of the cheese along with the distinct pretzel flavor was a perfect accompaniment to all the usual Thanksgiving treats.

for Thanksgiving rolls.  Well done!  Is is one of the great things in life to havegreat to have Thangiving with the family and friends.   We all look forward to it every year!  Cousin Jay outdid himself this year. He got a Williams and Sonoma turkey online, I didn;t even know they sold them,  and made it on his gas grill w/o smoke.  Best looking turkey ever - golden brown all over.

Thanks DA.  Sounds like you had quite the feast at Cousin Jay's.  We had a nice feast as well with a fried turkey and baked one along with the pecan, lemon, coconut, and chocolate pies as well as the apple cake and pecan cake my wife made for dessert.

Glad you like the rolls.  they did taste great and went well with the dinner.

Now, these are calling my name (although I'm not so sure about the maple syrup part).  Your creativity to "empty out the pantry" always has me interested and amused.  They look lovely and the tang of the cheese must make these really tasty, like a food course on its own.  And they look beautiful too. Something to catch the eye at the dinner table instead of some big ol' bird.

Thanks Alan.  I'm sure you would like these.  The maple syrup just added a little sweetness and I figured would be a nice compliment to the cheese.  it was very subtle but did work in the end.

Hey Ian...long time no post or see, but logging in and seeing these are sure to make me want to bake and visit here soon again.  These would last maybe 20 mins in my home.  I am a sucker for warm pretzel and cheese.  There's a great gastro pub in AZ called Culinary Dropout that does this amazing warm pretzel bites with a cheese fondue dip.  Good gad.

I hope you and your family are doing well and your business is thriving.  Hope you have some time to bake still and if you do give these a try.  If you can't get the food grade lye you can use baking soda (powder---can't remember).
