Latest Rye Bread - Finnish Rye/Ruislimppu

Profile picture for user Elagins

Ruislimppu is the traditional bread of eastern Finland, with a nutty-sour flavor profile that reflects the strong Russian influence on the region’s food culture. You can find the recipe by following this link to my blog, The Rye Baker.

Beautiful bread. Will bake it later in the week. I just checked your website. What is the bread on the cover of your upcoming book?

Stan,

I like the way that you have laid out the recipes on you Blog with picture showing various stages of the process.  Will your new book be laid out like this or will it be similar to "Inside the Jewish Bakery"?  Both are great, I'm just wondering.

Thanks,

Dwayne

The Rye Baker layout is kind of a hybrid between ITJB and the blog. Recipes are presented more clearly (as in the blog), but not as many photos.

Stan,

Will there be an opportunity to purchase a signed copy of the new book when it comes out (especially for us recipe testers)?

Thanks, Dwayne

I'm going to be in Seattle on Oct 4/5 and PDX that same week. I'll be happy to sign a copy for you then. Otherwise, it might be difficult, since my contract with my current publisher (Norton) has different conditions from those I had wiith Camino Books.

Stan,

I look forward to possibly seeing you when you are in PDX.  I was in my home state of Arizona a few months back and passed thru the town of Rye.  Might be a good place to kick off your tour.  : )

I'll keep everyone posted. Not sure if Rye, AZ is gonna be on Norton's map ....

Can I make coarse rye meal by putting rolled rye flakes in a food processor?

Rye flakes have typically been steamed and then rolled. Rye meal is the whole dry kernel that's been crushed. You can buy it at nybakers.com.
