What a great forum with lots of info. I am a longtime home bread baker but new to sourdough. My son is on a new diet to help with tummy pain and supposedly sourdough bread with a long ferment time won't bother his belly. Of course our city doesn't have any true sourdough to be had so I created a starter and off we go! Now that I am doing it though I am becoming a bit obsessed.

Sorry that your son is having tummy pain. I've read about how sourdough is easier to digest and helps many with difficulty digesting regular bread. But, I don't know anybody who can confirm that first hand. Please let us know how it goes for your son. Fingers crossed.
in the mix too. If your son isn't celiac, then he may be able to eat SD and SD with sprouted flour breads, especially those with some ancient grains or non gluten / wheat varieties in them if he just has a wheat ot gluten intolerance .

Hi Kate, We can't cure your obsession; if anything, it might get worse! We can however, help you to cope.... Seriously though, I'm a fellow Texan myself, so welcome to the site. I just joined not to long ago myself. It seems like I barely have time to bake, so as a result, I haven't found time to post any of my bakes on the site. I am hoping to do that soon, but in the mean time, looking forward to seeing what you are baking. marybeth

Good luck with your baking i know sourdough kind of seemed overwelming to me when I first started but it helped when I worked in a store bakery for over two years and learned a lot how to work with sourdoughs. I had only done yeast breads before that but almost prefer the sourdough breads now. It is hard to find a good sourdough unless you are near a larger city in tx.
