Bread with chia and flax seeds

I took a class in bread baking. Then I baked breads at home and took them back to the teacher for her comments.  She said that, just as in your loaf, there is NO flattening of the crumb or lack of rise at the very bottom of the loaf where it rested on the baking surface.  That detail is what makes a bread of especially fine quality.  Texture and flavor and crust and other things are important, but, those I can't judge from a photo.  Appearance of crumb I can comment upon.  Yours is excellent.
