flour sifter

Hi Everyone,

I am having a hard time sourcing flour sifters locally.  My local pottery supply store sells them in 60, 80 & 100 mesh.  I am new to home milling & am looking at sifting my home milled flour to achieve a high extraction.  My question is, can I start with a 60 or do I need to start with a larger mesh & then move up to a 60.  I am also curious if the 80 or 100 will work in achieving a white flour.

I only have one sifter and I believe it is a 50 since it wasn't specified when as as new home miller it was bought cheaply on amazon. It does do what was wanted which is sift out only the largest bits of bran. When the math is done it comes out about 95% extraction depending on what type of wheat is ground. That has been consistent with the old mill which was a micronizer and the new KoMo Fidibus 21 only about a year old. With the KoMo the bran is reground and sifted for even a higher extraction. One source you might keep in mind is Breadtopia. I believe they have two meshes, and know what they are doing because they do have an in house milling operation. They are only about an hour away and I visited when I picked up the new mill.

Thanks everyone for the reply.  Being in Canada makes is cost prohibitive at times when ordering from the US due to very high shipping costs.  I noticed that there are a tonne on ebay & a majority of which come from China.  The issue is that I have no idea the mesh size & neither do the sellers.  I asked a bunch of them & they all came back with the diameter of the sieve.  Has anyone purchased one of these?
