Ran across this video on youtube. Thought their rye bread very interesting. Huge loaves baked very hot and quickly.

a while and was going to bake this one if i could figure out what 'let it leaven' meant and what temperature the oven should be. Odd there is no salt or starter. A real old school rye

I've been saving this one for when apple cider was available, which is right now.  Never made a rye bread with apple cider
