Hello, I've been gone for a while from TFL, but never turned my back on baking. Hope to post some more again :)

Here are some multigrain rolls from last week's dinner

Why did you go and post that?    

Wow, the colour and shine is fantastic!  And look at all those little nubbly flavour bumps!  Great focus!

Is that a butter shine?  

The shine is just egg wash -- I find that if you egg wash the rolls, there's little to no need for steaming, which is convenient if you're in a hurry.

these are commercial yeast, with a biga preferment and a soaker. I recently got a new mixer (a 1200 Watt Kenwood) and this was a sort of test bake with a thick-ish dough -- worked great.
