We usually make bread at home, and sometimes we find that we accumulate leftovers. We usually prepare a pudding with some bread and ripe fruit. We usually use remnants of bread, rolls, brioche, buns, muffins or bread. It should be bread with soft crust.

I love bread pudding, or bread and butter pudding, but I'm the only one here who would eat it. How could I scale it down? To half, maybe?
Yes, maybe the half. Then bake it just 30 minutes, maybe. But I suggest you to prepare it hole. Think that can keep it into the fridge, covered in clingfilm or aluminium foil. It lasts 3-4 days. I cut a slice while I am cooking the meal, so after lunch time it's ready to eat.
