The Saturday 75% Whole Wheat Bread by Ken Forkish

- 375 gr whole wheat flour

-125 gr bread flour

- 400 ml lukewarm water

- 11 gr salt

- 1,5 gr instant yeast or 4,5 gr fresh yeast

Bulk fermentation, 4-5 hours.

Proof time: 1 - 1 1/4 hours.

Bake into a dutch oven. 25 minutes with lid on, 20 minutes lid off. 245 C (475F)
