I will be trying the master formula whole wheat loaf from Reinhart's Whole Grain Bread book for the first time. Instead of using the water in pan hearth method, can I just bake the dough in a Superstone oblong baker with the same results? If so, should I use the same temp and time?

No reason why it shouldn't work. Only way to find out is to try it. I know many people have had excellent results using those bakers.
