Yes, Bay State is a common bakery flour in my experience. The past three bakeries I have worked at, including my current have received Bay State Milling flours of some kind. Unfortunately I have yet to work with the kind you mention. It sounds like an AP Flour though.
Yeah it's an AP. I just wonder how well their flour quality is. I plan on make baguettes and some sourdough boules with because I purchased a 50 lb bag of it from a bakery.
