I was inspired by dabrownman's post on bialys to have a go with my special needs group at the care home I visit. I tried to add to your thread, DA, but there was no 'Reply' button?!?!
Anyway, we made two versions, one with minced onion and breadcrumbs, and one with dark chocolate and sultanas. The sultanas burnt a little, round the edges, so I'd soak them for a while next time to avoid this.
They were a great success, and I'll certainly do them again. I'd probably stick a bit of pesto in with the onion ones next time - maybe a bit of garlic and a few herbs. I love these recipes where you can ring the changes - as you amply demonstrated, DA! (But hold the cilantro - shudder! :) )

Thanks, DA - So your wife's in the same business! Wonderful - there is great satisfaction to be gained from working with these groups, I love it, and I'm sure your wife does too!
Bread machines - People tell me, apologetically, they have a bread machine - but they're just a tool at the end of the day, and at least, using a machine, you're controlling the quality of the ingredients used.
