I have a few recipes from Ciril Hitz that give the baking times for a convection oven. Do I need to adjust the time and/or temperature for a conventional gas oven?
I'm not exactly sure about conventional gas oven. But a general rule of thumb is to increase temperature by 20C when converting recipe from convection to conventional oven. However, please keep in mind that every oven is different.
Try increasing your conventional gas oven by 25 degrees F. and increase bake time only a few minutes. Every oven bakes differently, so those are general guidelines. And I always begin watching a few minutes before the earliest suggested bake time.
