Very interesting and informative.  Thanks for posting the link.  A couple of years back I must have watched the previous Richard Bertinet video (Gourmet Magazine's site) a half dozen times.  No doubt about it, he's amazing.

This video shows Bertinet's flip and flop (as I call it) technique much better than the original, which Howard refers to.

I'll admit I tried it once and make an amazing mess of my counter and dough.

Enjoyed as much as the Gourmet Mag version. Thanks.

After the autolyse I wet the counter and my right hand and slap the shaggy mass down and lift it a few times, and suddenly I have a smooth ball of dough. Magic! Can result in white spots in odd places but that's a small price to pay, A. Spots on walls and windows, not dough! A.
