Lemon - Rosemary Cream Scones

These scones are lovely and moist and have a wonderful flavor.  They taste great with jam and butter.  I enjoyed a wedge with mascarpone cheese.  They make for nice looking Easter scone.

My variation on a lemon scone recipe.

8 oz. plus extra for some light kneading and adjusting hydration - I used Pillsbury All Purpose Flour

2 Tablespoon Sugar

1 Tablespoon Baking Powder

1/4 teaspoon Salt

1/4 cup Unsalted Butter

2 teaspoons Lemon zested

2 teaspoons Fresh Rosemary - clipped into small pieces

2 Medium Eggs

4oz. whipping cream - I only had heavy cream so I mixed half heavy cream and half milk

Sparkling sugar for sprinkling about 2 Tablespoons -

In a Medium bowl.  Wisk all the dry ingredients, lemon zest and rosemary in a medium bowl.

Using a pastry cutter add the butter until the butter is in very small pieces..the flour will look crumbly.

In a small bowl.  Lightly mix 2 Medium eggs and cream.

Make a well in the flour mixture and add the egg, cream mixture into the center.

Mix quickly and gently until all is moistened.  I use a fork.

Dump out onto a floured surface and gently knead and shape into a round.  

Brush with some cream and sprinkle with sparkling sugar.  Make slices with a wet knife into eight wedges.

Bake 400F pre-heated oven for 20-30 minutes or until lightly golden brown.  I baked for 20 min. on 400F convection.

where I live.  I always love making something using the flowers when my  Rosemary plant blooms.  The tiny little blue flowers are so lovely.  Also I sprinkled the extra long zested lemon on the scone top just before baking and added more fresh with the Rosemary flowers for garnish.

I also love lemons.  I have an tree full of them so I always have plenty of organic lemons available.  These are so moist and delicious.  They can be made so easily and fast.  They are delicious with other fresh or dried fruits and fresh herbs.  Lemon and fresh cranberry and Cherry scones are my favorites.

 You did not listed the egg in the recipe,  how many eggs  in the recipe? You scones looked very good.

Thank you siuflower,  I shouldn't be talking to my girlfriend when writing up my post : )  In a small bowl.  Add two eggs to the cream mixture and lightly beat.

That's one mouth watering loaf there.  Nice touch with the Rosemary flowers.  If not because I am watching my caloires I would make it and chow down the whole thing! :-0

Your scones are beautiful! If you made cherry scones would you still use the lemon? What kind of cherries would you use? Dried? Thanks.

It has dissappeared...my husband loved it.  Tart Cherry Scones..Oh..Probably my favorite!  I absolutely love the dried tart cherries in scones or just for a snack.  I keep a few bags always on hand and add a little almond and vanilla extract/almondslivers for garnish too sometimes...Almond is lovely with apricots...I would use lemon or orange zest with fresh cranberries in my scones..though I prefer lemon..lemon zest with blueberries.  I love using fresh cranberries chopped or whole in baking...dried are very nice..and I love the tartness of the fresh..I dredge them in sugar before adding them to my dough.  They are coming straight out of my freezer and the sugar clings nicely.  Oh my..how I have to resist ; )

Hi Sylvia,

Saw your recipe & it gave me the confidence to try my hand at scones for the first time.  They are my hubby's favorite & I have never made them.  Your recipe was easy to follow & they came out great.  I uses your base & added blueberries instead of rosemary ( only beause bluberry scones are hubby's favorite).  Thanks so much for sharing!

The scones recipe works for adding your favorite fruits, we love the blueberry too : ) My favorite is dried cherries scones and adding a sugar glaze is tasty too!
