Hi everyone - I love this website! My quesiton is "how to open an artisan bakery." Or rather, is there any litterature or websites devoted to the artisan entrepreneur? If I go this route, I'll certainly have to attend formal education like the SFBI. I've orded "The Village Baker" - ironically, I used to live in Monterey, right next to Capitola but I wasn't bitten by the bread bug then.

I would also suggest some other necessary options.
One apprentice withsome one not in your area to learn what is needed.
Second, take some classes from AIB aibonline.org
