I've been working all summer to find the right formula . . . they're so much easier to make while were on the boat. My favorite no-knead recipe is a combination of Artisan Bread in 5 Minutes and Cook's Illustrated Almost No-Knead. Mix once and I've got bread for the rest of the week. The bread above is not a no-knead; it's a recipe that I converted to sourdough. . . haven't even stored it with the others yet.
2 cups proofed sourdough starter
3/4 cups warm water
4 cups unbleached all purpose flour
1 tablespoon olive oil
1 1/2 teaspoon salt
1 cup shredded parmesan cheese
Used the autolyse technique and it really did reduce the amount of kneading required. Baked one loaf in a La Cloche and the other in a cast-iron pot.
