Thank you! I saw this article a couple of years ago, and it is a good one. And it has a link for his chocolate panettone recipe. I have not tried this recipe, have you?

Have not tried it - I had forgotten it was there.  But I do like its simplicity. I also have the perfect choc to use in it.

This was just a really useful article when I was starting Panettone. It was the first time I really appreciated what was going on and why it is such an amazing....bread? Pastry? cake?  It almost doesn't fit into any category.

The other big step was learning that homemade peel is almost essential - given it is more acting as a spice.  Also which peel you use defines how close you match the taste you are using as a reference.
