Never Be Afraid To Substitute Ingredients
Hamelman's Five-Grain Levain. A really lovely recipe. Highly recommended. Made a few substitutions...
- Instead of Bread flour I used a pasta flour which has a 50:50 Bread and Durum flour mix.
- Instead of Whole-Wheat I used Wholegrain Spelt.
- Instead of Cracked Rye I used Buckwheat Groats
- Instead of Flaxseed (aka Linseed) and Sunflower Seeds I used a seed mix which had Pumpkin Seeds, Sunflower Seeds, Golden Linseed, Brown Linseed and Sesame Seeds.
- Instead of Oats I used Buckwheat flour.
I did not substitute the water or salt. I don't like to stray too far from a recipe :)
The Buckwheat Groats and Flour made the scald like a tangzhong. It's cooling now but everything seemed to go very well and what a lovely aroma while this bread was baking.
Word of Advice: Before starting a recipe check what you have in stock.
Typical Pullman Sandwich Loaf crumb and really delicious. Even swapping the ingredients but using Hamelman's techniques produces excellent bread. Very happy with this bake.

Well done, beautiful looking and delicious sounding loaf.
So started the recipe with that in mind. I also didn't have cracked rye so aimed to use buckwheat groats. Had a bag of spelt flour and didn't wish to buy whole wheat before using up what I had in stock. Then when it came to the soaker I was sure I had some oats but turned out I didn't so used buckwheat flour. After doing all that the whole recipe was pretty much substituted.
Still turned out very delicious.
Can't wait to see the crumb!

Very nice looking loaf Abe! A bit like the ship of Theseus, whether it's the same recipe or not, but as long as it's delicious, doesn't matter really :)
Love doing bakes like these. I make a mental note of what I'm doing in case it turns out well. Really nice flavours coming through with this bake. I do like your analogy. Reminds me also of 'The Man That Was Used Up' by Edgar Allan Poe.
If you've never tried Hamelman's Five-Grain Levain I really recommend it.
