Loaf to de-stress

Work has been challenging as of late, so decided to bake a loaf to destress. 

78% hydration yielded a delicious loaf.  Crumb was a little tighter than I'd like, but happy with the result overall.

I agree with everyone about the perfection of the crumb shot... What was your flour mixture. Levain?

Thank you thank you!  Here it is:

  • 450g King Arthur bread flour 
  • 50g whole wheat flour 
  • 390g water at around 80-85F 
  • 10g salt 
  • 100g levain, made from a starter fed at 1:1:1

It adds another interpretation for letting the dough relax to make it easy to work.

Thank you!  I really take my time when I work on my dough.  By the time I shape, the dough is relaxed, fun, and super easy to work with.
