Feed sourdough starter with lime?

Hey everyone ?

 

I watch Birote bread in mexico yesterday and they feed the sourdough starter with Eggs, Suger, Beer and Lime, i looooooooooooove lime so i have my own starter and i wanna feed it with lemons can i? I hope someone help me, im sorry if my English is bad but i try my best ? thank you.

Hi Ashy--I have made birotes salados, but I just used beer for the starter, no lime or eggs. I imagine you could substitute lemon for lime, and you could probably add some lemon or lime to the final starter feed. You probably do not want to put anything except for flour and water in the mother starter, though.

Are you based in Guadalajara? I will have to try some lemon/lime in the starter next time I am in the mood for tortas ahogadas!

Are you based in Guadalajara? Yes sir, what you mean the Final starter, i have 4 years old starter, i feed it with whole wheat flour AP flour 50% 50% and water only, so can feed it with beer, eggs and lemon or lemon & beer only? I see a lot of sourdough starters with different feeds.

I didn't see an email notification that you had replied. I shared my recipe for birotes on my blog, but like I say I haven't tried feeding the starter with anything except beer. The important thing is to add beer or lime or eggs to the final feed!

In this documentary about the birote salado they specifically mention eggs and lemon added to refresh to mother yeast which I imagine is a final feeding before mixing... what do you think?  is this necessary?

The recipe I use doesn't call for eggs or lemon/lime, so to my knowledge it is not necessary. However, I'm sure it adds some good flavor. If you try it out, let me know how it goes!

Thanks for the documentary link too, I'm looking forward to learning more about birotes.
